Healthy, Tail Waggin’ Treats Giveaway

It’s giveaway time!!! Before we get into the exciting details, I’d like to ask a quick question: How many of you have a pet animal? Maybe a loveable dog, quirky cat, or even a spunky goldfish?

Most of you, I’m sure, have an amazing pet that you love to come home to and see after a long day at work or school. I know that my golden retriever instantly turns my day around when I see his tail wagging energetically back and forth as soon as I walk in the door.

Now what if I told you that there are thousands of animals in shelters across that nation that are without  a family member to greet them at the door?

Recently, animal shelters nationwide are facing extremely difficult times with pet adoptions. The combination of a harsh economic climate and society’s preference for younger pets, has left many older dogs and cats without homes. Shelters are overwhelmed with the amount of animals they’re housing and greatly need additional assistance.

In my Sales Management Class, we were recently assigned an exciting, philanthropic group project. Each group was assigned a local pet adoption agency to work with, and given a specific fundraising objective to meet. My group was provided the opportunity to fundraise and increase awareness for the Alachua County Humane Society.

Being the food blogger that I am, I figured what better way to promote awareness for the Humane Society, than my blog?

During the next 2 weeks, an amazing giveaway will take place on my Tropical Eats blog. To enter, all you need to do is submit a recipe. This can be a favorite family recipe or even a pet friendly one. These recipes will then be compiled in a virtual cookbook called Healthy, Tail Waggin’ Treats. There are currently a few other e-Cookbooks on the internet, but what makes ours unique is the special section dedicated to homemade pet treat recipes, pet friendly cakes, and more. Humans aren’t the only ones who shouldn’t have preservatives or processed foods. ;)

After the recipes are compiled, the cookbook will then be featured on the Alachua County Humane Society website. We will provide the link to the ebook in exchange for donations that go directly to the Humane Society. Any amount would make a great difference for this animal shelter.

Donations will go towards urgently needed pet supplies including: dog and cat food, animal treats, pet crates, collars, leashes, kitty litter, baby shampoo, laundry detergent, bleach, paper towels, and more.

    This is a great giveaway and awesome project. It’s so sad that many animals are without care and homes. I just tweeted and i will be donating a recipe. Funny thing, my Mother just gave me some recipes for dogs too.

    My favorite Casserole recipe:

    Ingredients
    1 1/2 lb. ground beef
    1 onion, chopped
    1 1/2 C. diced potatoes
    1 1/2 C. sliced carrots
    1 1/2 C. peas
    1 1/2 C. macaroni, cooked
    1 10 3/4 oz.. can cream of celery soup
    1/2 lb. cheddar cheese, grated
    2 C. milk
    1 1/2 tsp. salt
    Directions

    Fry beef and onion in saucepan until brown. Drain. Cook vegetables just until soft. Combine all ingredients in slow cooker. Cover. Cook on high 2 hours, or low 4-5 hours.

    Variation:

    Skip pre-cooking the vegetables; add them raw to the slow cooker. increase cooking time to 4 hours on high, or 8-10 hours on low. Add the cooked macaroni and the milk during the last 15 minutes if cooking on high, or during the last 30 minutes if cooking on low.

    Yields: 6-8 servings

    Here’s my recipe! it’s simple yet delicious!!!

    1tbsp. almond butter
    1 whole wheat graham cracker crumbled
    1-2 dates
    crumbled almonds and walnuts
    vanilla extract

    in food processor, combine ingredients and mix!
    then using hands and LOVE, make into a bone shaped or heart shape. refrigerate 3-4hrs before presenting it to your lovable dog or cat!

    I am submitting my Corgi-approved dog biscuit recipe!! I have blogged it before so to see pictures, go here:

    but here is the recipe:

    Ma’s Seven-Way Dog Cookies
    dry ingredients:
    1 1/4 cup whole wheat flour
    1/2 cup unbleached or all purpose flour
    1/4 oat bran
    3/4 cup dry milk
    1/2 cup oatmeal (ground fine in the blender)
    2 teaspoons beef or chicken bouillon (optional, I don’t add this)

    Mix all of the dry ingredients together.

    To this, add your wet ingredients:
    1 egg
    1/4 cup canola oil
    1/2 to 3/4 cup hot water

    And ONE and only ONE special ingredient from the following list:
    1/4 cup dried cheese
    1/4 cup peanut butter
    1/4 cup dried veggies, chopped fine
    1/4 cup dried fruit, chopped fine (not raisins)
    1/4 apple sauce
    1/2 to one small jar of any baby food (meat, fruit or veggies)

    Mix together by hand, roll out and cut shapes as desired. Bake at 350 for 10 minutes. Remove from oven and flip all the cookies over. Bake for another 10-15 minutes. Let cool before serving.

    And another one, for the dog with a sweet tooth like mine!

    Cranberry-Cinnamon Treats

    1/4 cup of margerine (1/2 stick)
    2 tsp vanilla
    1/3 cup honey
    2 eggs
    2 tsp cinnamon
    2 1/2 cups whole wheat flour
    3/4 cups unbleached flour
    3/4 cup dried cranberries, try to find unsweetened but sweetened will work (if they are large, chop into smaller pieces.)

    Mix margarine, vanilla, honey and eggs together. Then add flour and cinnamon. Stir in cranberries. Roll out on floured surface and cut with cookie cutters or use my snap-making technique with a pizza cutter. Bake at 350 for 15 minutes, remove and let dry completely.

    and this one:

    Mocha Almonds

    1 tsp sugar
    1 tsp coffee
    2 tbsp boiling water
    handful of raw almonds
    2 tbsp cocoa powder
    Dissolve sugar and coffee in hot water. Toss almonds quickly to coat in the coffee syrup, then toss with cocoa powder. Lay flat on a plate and microwave for 15 seconds to ‘roast’.

    Here is my first ever recipe creation…

    Peanut Butter Banana Bliss Cake with a Peanut Butter Drizzle

    1 cup flour
    1/3 cup sugar
    1/2 cup peanut butter (or any type of nut butter)
    1/2 half of a yogurt (plain or vanilla flavored)
    1 ripe banana- mashed
    1 tsp vanilla
    1 tsp baking soda

    Mix well. Bake at 350 degrees for 15 minutes in a 9×9 pan. Let cool.

    Peanut Butter Glaze- Mix powdered sugar, milk and peanut butter to your consistency liking. Spread on top of cake. ENJOY!!!!!

    Pretzel Candy Melts
    Ingredients
    • 1 16 oz. bag Snyder Snap Pretzels (NOT butter snaps!)
    • 1 14 oz. bag M & M Milk Chocolate Candies
    • 1 14 oz. bag Chocolate Candy Melts

    Directions
    1. Heat oven to 350 degrees.
    2. Place as many pretzels on baking sheet as will fit.
    3. Top each pretzel with one candy melt in the center.
    4. Bake pretzels in oven for 1 minute 45 seconds to 2 minutes or until chocolate is softened.
    5. Remove from oven and immediately place an M & M on each candy melt, pressing slightly down to secure the M & M on the candy melt.
    6. Allow to cool completely and then place in freezer for ten minutes to firm up chocolate.
    7. Remove from freezer and enjoy!

    Suggested Holiday Colors:
    Halloween: Brown, Orange, Green, Purple
    Thanksgiving: Brown, Orange, Green
    Christmas: Red, Green, Brown, White
    Easter/Spring: Pastel
    Valentine’s Day: Red, White, Pink

    Tuna Noodle Cassarole!

    1 bag extra large egg noodles (you can subsitute whole wheat egg noodles!)
    1 can peas
    1 can cream of mushroom soup
    2 cans of tuna

    Boil the noodles. Add a dash of salt into the water for a bit of flavor.
    When the noodles are done, rinse off with cool water.
    Put a layer of noodles at the bottom of a cassarole dish.
    then a layer of peas
    then a layer of tuna.
    continue until dish is full.
    once full, pour the mushroom soup on top, using a fork to let the soup seep all over the noodles and to the bottom of the dish.

    bake for 45 minutes to an hour in the oven on 375 degrees.

    let sit for 5 minutes to cool off a bit.

    add some salt and pepper. serve with some cottage cheese and ENJOY!

    It’s my favorite meal and my momma always cooks it for me when I go home to visit!

    Here is another recipe (from another fabulous bloggie!):

    STRAWBERRY SORBET

    INGREDIENTS:

    1 cup water
    3/4 cup sugar
    1 pint fresh strawberries
    1/2 cup orange juice
    DIRECTIONS:
    1. Combine water and sugar in a pan, stir over low heat until sugar dissolves.
    2. Bring to a boil and gently boil for 5 minutes without stirring.
    3. Remove from heat and set aside to cool.
    4. Wash strawberries; remove caps.
    5. Puree fruit in blender or food processor until almost smooth.
    6. In medium bowl (or blender) combine fruit with cooled syrup and orange juice.
    7. Pour into ice cream maker and freeze according to the ice maker’s instructions.
    8. OR, pour into an 8 x 8 pan and cover with plastic wrap.
    9. Place in freezer and freeze until firm, 1-2 hours.
    10. Stir 2 to 3 times with a fork while freezing.
    11. Freeze, eat, and enjoy!

    I’ve made it multiple times and it’s amazing!

    Banana Nut Peanut Butter Honey Sandwich-Extra Nutty!!!!

    *****Perfect for breakfast! You won’t be hungry for another 4 hours haha!

    ½ of ripe banana
    2 ounces of your favorite nuts, mine are pecans
    2 slices of Pepperidge farm whole wheat bread…or any bread LOL
    1 teaspoon of orange blossom honey…or any kind of honey
    2 table spoon of smooth peanut butter…or crunchy…whatever you like

    1. mush together banana, peanut butter, pecans and honey in a bowl and spread generously on bread
    2. open up wide and enjoy! LOL

    WOW what an amazing giveaway. My dog passed away a year ago in december and everyday i miss him dearly!

    another recipe for chococalty maccaroons

    -1 15oz sweetened condensed milk
    -2 oz unsweetened chocolate
    -2 cups shredded coconut
    -1 cup chopped nuts
    -1 tsp strongly brewed coffee
    -1 tsp vanilla
    - 1/8 tsp salt

    at 350 degrees, oil a baking sheet. Place the milk and chocolate in a double broiler, stir constantly for 5 min. once melted, add remaining ingredients and Turn off the heat. Stir all together to blend. drop tbsp full on baking sheet and bake for 10 min

    I just fainted.. twice. This giveaway is EPIC! Ive never seen so many mini laras before — what a beautiful sight :)

    This isn’t much of a recipe but it’s one of my favorite things to make..

    Tuna salad
    ❑ 2 oz tuna
    ❑ laughing cow garlic and herb wedge
    ❑ dollop of plain chobani
    ❑ chopped apples
    ❑ salt and pepper to taste
    mix it all up and enjoy :)

    What a great giveaway and promotion for shelters. My husband and I just adopted our first dog from a shelter less than three months ago and she’s the light of our lives. I don’t know what I’d do without her now, and can barely hold myself back from adopting more friends for her :)

    Here’s one of my favorite appetizers to make for parties. Simple but delicious.

    Fig-licious Drops-

    ingredients:
    Fresh Figs
    Feta Cheese
    Fresh Basil
    Prosciutto (about 4-inch strips, 1-inch wide)

    directions:
    Slice a pocket in each fresh fig. Fill the pocket with about a teaspoon of feta cheese. Cover the cheese with a basil leaf. Wrap each filled fig with a slice of prosciutto and secure with a toothpick. Enjoy!

    variation:
    Follow the same directions as above, but substitute a teaspoon of fresh buffalo mozzarella for the feta cheese. Bake in a 350 degree oven for 8-10 minutes or until cheese melts. Enjoy this one too!

    a little something i used to throw together for my kitty cat was:

    1 container of canned tuna
    1/4 cup of my kitties favorite dry food
    and a mashed banana.

    i know it sounds weird, but my cat LOVED getting it as a treat!

    here is one of my favorite human recipes:

    Easy as Apple Pie Oatmeal

    1/3 cup oats
    2/3 cup of water
    1 diced medium apple
    small pat of butter
    1 tbsp brown sugar
    cinnamon and nutmeg to taste

    first cook the apple in the butter and brown sugar
    boil or microwave the oatmeal
    Stir apple mixture into the oatmeal
    add cinnamon and nutmeg :)

    Dad’s Famously Healthy If Somewhat Grainy Veggie Burgers

    1 cup of lentils cooked as per instructions on package

    (til they start to split open)

    1 cup of brown rice as above

    1 Onion and 6 Mushrooms finely chopped and sautéed in olive oil

    1 minced garlic clove

    1 teaspoon of ground pepper

    1 cup of rolled oats finely ground (coffee grinder)

    ½ cup of oatbran (can substitute ½ cup of oats)

    Mix and mash together ingredients.

    Form into patties (preferably with a hamburger maker)
    Stack with saran wrap in between each burger (to keep ‘em separated), place in zip lock bag and freeze.

    Brush with oil before cooking to prevent them from sticking to the grill.

    I am SO excited and hopeful about this giveaway! :) here’s my first recipe and I will submit 3 more, afterward. I don’t have twitter, unfortunately, but I’m hoping 4 entries will score me some larabars! :)

    Here’s a recipe for my great grandma’s stuffed peppers: (You can mix it up a little bit depending on your taste)

    -2 C. frozen ground turkey or beef
    -1 pkg. (10 oz) frozen corn
    -1 1/2 C. salsa (try newman’s own pineapple!)
    -1 1/2 C. brown rice
    -1 C. shredded monterey jack & colby cheese
    -1 yellow, 1 green, & 1 red bell peppers each halved with insides removed
    -1/2 C. water

    Preheat oven to 400 degrees. Mix meat, corn, & salsa on the stovetop in a non stick pan sprayed with non stick spray. Cook on medium until meat is cooked through (usually about 5 min. or so) stirring frequently. Remove from heat and stir in rice & 1/2 C. cheese. Spoon mixture into the pepper halves and place halves into 13×9 baking dish sprayed with non stick spray. Pour water into the bottom of the dish and cover the dish with foil. Bake for 30 min. and then remove aluminum, sprinkle with remaining cheese, and broil another 10 min. or until cheese is melted :)

    One of my personal favorite recipes that I haven’t even named!

    veggied up fruit salad:

    -1/2 bag of broccoli slaw
    -1 container of greek yogurt
    -1/2 cup frozen fruit (I usually use a berry blend)
    -1/4 cup of pineapple juice
    -1/2 cup of fiber one cereal
    -1 packet of splenda
    -cinnamon to taste

    combine all ingredients and top with some cinnamon! it’s amazing!
    sometimes I also add a little bit of torani sugar free vanilla syrup! it really sweetens it up! :)

    These are another family favorite! My Mom calls them “idiot cookies” because you don’t even have to bake them! :)

    -1 3/4 cups white sugar
    -1/2 cup milk
    -1/2 cup butter
    -4 tablespoons unsweetened cocoa powder
    -1/2 cup crunchy peanut butter
    -3 cups quick-cooking oats
    -1 teaspoon vanilla extract

    In a medium saucepan, combine sugar, milk, butter, and cocoa. Bring to a boil, and cook for 1 1/2 minutes. Remove from heat, and stir in peanut butter, oats, and vanilla. Drop by teaspoonfuls onto wax paper. Let cool until hardened.

    Easy peasy! :)

    Another family favorite that we like to call “dog food dip”. The name makes it unappealing, but it sure hits the spot!

    -15 oz can chili without beans
    -1/2 lb sharp cheddar cheese, shredded
    -8 oz package cream cheese

    In the bottom of a sqaure, glass baking dish, place the 8 oz. block of cream cheese & microwave until softened and spreadable. Coat cream cheese on the bottom of the dish and then layer with chili. Microwave for 2 minutes. Then add cheddar cheese and microwave until cheese is melty and delicious :) Serve with tortilla chips!

    1/2 cup cottage cheese
    generous dash of cinnamon
    1 tbsp apple butter
    1 sliced pear

    great for dessert, breakfast, or a snack!

    Green Tea Macadamia nut Crusted Cheesecake Recipe

    Macadamia Chocolate Graham Cracker Crust

    1 package/1.5 cups of low-fat chocolate graham crackers crushed
    10 whole lightly salted macadamia nuts, crushed
    1/3 cup melted butter
    1/4 cup granulated sugar

    Method: Combine all ingredients in a bowl and press into bottom of a 9 inch spring form round pan. Bake in a 350 degree oven for 9 minutes. Let cool before filling.

    Green Tea Cheesecake Filling

    2 packages of 8oz fat-free cream cheese (16oz total)
    2 tbs green tea powder/matcha powder (see picture below for example)
    1 egg + 2 egg whites, beaten
    2 tsp vanilla
    3/4 cup granulated white sugar or replacement

    Method:
    Preheat oven to 350 degrees.
    In a large bowl, beat together the cream cheese and sugar until smooth. Mix in the green tea powder, eggs, and vanilla extract until lightly and creamy; pour into the prepared crust.
    Bake in preheated oven for 25 minutes, or until the center jiggles evenly when the cake is shaken lightly.
    Refrigerate at least 4 hours

    Easy Peasy Ratatouille!!

    Ingredients

    2 medium sized zucchinis
    2 medium eggplants
    2 shallots, sliced thinly
    5 garlic cloves, sliced thinly
    2 large tomatoes, diced
    1/2 yellow pepper
    1/2 red pepper
    Spices & herbs of your choice (I used 2 tbs of Mrs. Dash)
    1 tsp white sugar
    Olive oil
    Black pepper

    Method:

    1. Chop all vegetables in small cubes.
    2. Heat 2 Tbsp olive oil in a large pot.
    3. Add the zucchinis and eggplants and cook for 5 minutes until softer. Set aside.
    4. Heat 1 more Tbsp olive oil and then add the garlic, peppers and shallots. Cook for 3 to 4 minutes, until fragrant & soft.
    5. Add the tomatoes and mix well. Cook for 5 minutes before adding the zucchinis and eggplants again.
    6. Season with spices, herbs, sugar and pepper.
    7. Cook uncovered on low heat for 1 hour or more!

    Good for Ya CornBread Loaf!

    1 cup all-purpose flour
    1 cup yellow cornmeal
    2/3 cup white sugar (use less if corn is sweet)
    1 teaspoon salt
    3 1/2 teaspoons baking powder
    1 egg
    1 cup skim milk
    1/3 cup vegetable oil
    kernels of 1 fresh sweet ear of corn

    DIRECTIONS
    1. Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a loaf pan.
    2. In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until combined (Don’t over-mix). Mix in corn kernels. Pour batter into prepared pan.
    3. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

    1 large, very ripe peach
    4 slices of bread
    1/3 cup part skim ricotta cheese
    1 tsp vanilla
    1 tbsp Honey
    Butter or cooking spray
    Powdered sugar for dusting (optional)
    A cute cookie cutter (optional)

    First mix the honey and vanilla into the ricotta cheese.
    Then slice up the peach very thinly.
    You can use a cookie cutter to make cute shaped sandwiches. I love to use my giant heart cookie cutter :) I feel it portrays all the love I put into the food I cook for people, haha!
    Simply spread the cheese mixture onto a slice of bread, and arrange the peaches to fit.
    Heat some butter or cooking spray in a skillet and cook until golden brown.
    Dust the top of the sandwich with some powdered sugar, and drizzle with more honey if it suits your fancy.

    * 3/4 cup (6 ounces) 1/3-less-fat cream cheese
    * 1/2 cup packed brown sugar
    * 1/2 cup canned pumpkin
    * 2 teaspoons maple syrup
    * 1/2 teaspoon ground cinnamon
    * 24 apple slices –for dipping

    Place first 3 ingredients in a medium bowl, and beat with a mixer at medium speed until well blended. Add syrup and cinnamon, and beat until smooth. Cover and chill 30 minutes. Serve with apple.

    Colorful Broccoli Salad

    serves 4

    Salad
    2 Broccoli floret and stalks, chopped (1/2 inch pieces)
    1/2 cup golden raisins
    1/4 cup sunflower seeds
    3/4 cup blue cheese, crumbled
    1/2 cup yellow bell pepper, chopped
    1/4 cup red onion, chopped

    Vinagrette
    1/2 cup olive oil
    1/4 cup red wine vinegar
    1 1/2 tablespoons Dijon mustard
    1 tablespoon brown sugar
    1 tsp salt
    1 tsp crushed black pepper

    Chop the broccoli florets and stalks in 1/2 inch pieces and place in a salad bowl. Add the rest of the ingredients and toss with vinagrette before eating. Crunchy and flavorful!

    Mexican Sopes

    2 cups instant corn mix (Masa preparada)
    1 1/4 cup water
    1 tsp salt
    2 cups of shredded cabbage (red or green)
    1/2 cup red onion, diced
    1/2 tsp salt
    1/2 lime, juiced
    2 tomatoes, diced (I used heirloom tomatoes from the Farmer’s Market)
    3/4 cup fresh cheese (Queso fresco) I used this brand
    1 can refried black or pinto beans
    Salsa of your choice

    First prepare the masa by mixing the instant corn mix, salt, and water in a mixing bowl. Let the dough sit for 5 minutes. Grab some dough and roll it until golf ball size. Press the dough on a mat or on your hand until flattened. Not the tortilla thinness, but a little thicker.

    You should then heat a pan on med-high with a 1/4 inch oil. Fry each dough pattie about 3-5 minutes until golden brown. Keep the corn patties warm by placing them on a baking sheet in the oven at 300 degrees F.

    Warm the beans in the same pan after frying the patties and set aside.
    Now comes the assembling of the sopes. Take one corn pattie and layer with 1 tablespoon beans. Sprinkle 1 tablespoon fresh cheese and then add the tomatoes. The cabbage salad is the last thing to add.

    In a small bowl, add the cabbage, 1 tsp salt, red onion, and lime juice.

    Best-Ever Peppermint-Chocolate Chip Cookies

    makes 16-18 cookies

    2 cups all-purpose flour
    1/2 tsp baking soda
    1/2 tsp salt
    3/4 cup salted butter, melted
    1 cup brown sugar, packed
    1/2 cup white sugar
    1 Tbsp vanilla extract
    1 egg
    1 egg white
    1/2 cup semi-sweet chocolate chips
    1 cup York peppermint patties, chopped

    Preheat oven to 325F. Place a sheet of parchment paper over a cookie sheet.

    Sift flour, salt, soda, and set aside. Mix the sugars with the melted butter until thoroughly mixed, then add the egg, egg white, and vanilla extract. Mix until creamy.

    Add sifted ingredients and mix until blended. Stir in the chocolate chips and chopped peppermint patties. Using a 1/4 measuring cup, place dough in cup, scoop and place 1 inch apart on parchment paper. Bake for 19 minutes and cool on cookie rack.

    I tweeted your giveaway, and here’s a recipe from the Three Dog Bakery in L.A. The one I go to is at the Farmer’s Market on 3rd and Fairfax, but they have other locations as well. My little chihuahua, Leila, loves these!

    Banana “Mutt” Cookies (for dogs or humans!)

    3 cups bananas — mashed
    1 tsp. vanilla
    6 cups oats
    1 cup peanuts — chopped
    1/3 cup applesauce — unsweetened

    Preheat oven to 350 degrees. Mix all ingredients together thoroughly. Use
    teaspoon to drop on baking sheet sprayed with a nonstick cooking spray and
    press flat. Bake for approximately 15 minutes, or until slightly brown.
    Cool on a rack and store in an airtight container. Yield: approximately
    2 dozen cookies.

    Oh my goodness I NEED minilaras! excellent giveaway, and for such a good cause! Here’s my pet friendly recipe-I take peanut butter and mix a little cornstarch in to make it roll into a ball-able then smush a carob chip into it and feed em to my puppy as treats:) She loves them!     Very cool idea. I adopted my dog and my cat I found in a dumpster. They make the best pets. So when thinking about ercipes I know I do not cook a lot for myself. But when thinking about “treats” for my dog, here is a nice little treat that can be given to dogs, keeping in mind the size of the dog will indicate how much to give to the animal at once. I do like a breakfast bowl (since she won’t leave me alone when it comes to breakfast foods especially).
    layer in dog bowl: 1/3 cup rice, 1 scrambled egg, topped with shredded cheese. (No onions or garlic since dogs can’t have those things). Let melt, but serve to dog after it has cooled down. Seriously I made the mistake once of not paying attention and my dog inhaled a hot scrambled egg. I think I was more upset than see was.

    This is wonderful – what a great cause! I have two dogs of my own in New Mexico (with my parents), and they bring so much joy to my life. I hate thinking that animals out there are suffering.

    My PB dog treats:
    1 cups whole-wheat flour
    1/2 tbsp. baking powder
    1/2 cup peanut butter (chunky or smooth)
    1/2 cup milk

    Preheat oven to 375′F.
    In a bowl, combine flour and baking powder. In another bowl, mix peanut butter and milk, then add to dry ingredients and mix well.
    Place dough on a lightly floured surface and knead. Roll dough to 1/4 inch thickness and use a cookie cutter to cut out shapes – small ones work the best)
    Bake for 20 minutes on a greased baking sheet until lightly brown. Cool on a rack, then store in an airtight container.

    Watch them carefully, as they burn easily!

    What a wonderful cause and terrific giveaway!
    Here’s a recipe I make for my family but my dog, Lucy, loves it, too!

    Tomato Chicken

    1 pounf boneless, skinless chicken breasts
    2 14oz. cans diced tomatoes with garlic
    dried oregano to taste
    dried garlic to taste
    dried basil to taste
    salt and pepper to taste

    Preheat oven to 350.
    Place chicken breasts in a large baking dish.
    Sprinkle chicken liberally with dried spices.
    Pour both cans of tomatoes over the chicken to coat.
    Place baking pan in the oven and bake for 30-40 minutes or until chicken is cooked through.
    Enjoy with your family – and share with your dog!

    I am submitting my absolute favorite stuffed pepper recipe :) Hope it’s not too late!

    Serves 4

    4 peppers, tops cutoff, insides cleaned out
    2 clove garlic, minced
    1 chopped onion
    1 tblsp chopped ginger
    1 package ground turkey (or chicken)
    6 oz. tomato paste (1/2 small can)
    1/4 cup soy sauce
    1/2 cup water

    Saute garlic, onion and ginger in 1 tblsp olive oil. Add ground turkey and let it cook through over medium heat. Then add the water, tomato paste & soy sauce to the mix (I also add a splash of red wine sometimes) and let flavors combine over med-low heat for about 10 minutes – if it’s kinda thick add a bit more water.

    Spoon the turkey mixture into each pepper, top with Parm cheese (however much you want!). I also put a lil’ Parm in the bottom of the pepper before filling too :)

    Place in a 350F oven for about 10 minutes until cheese melts a bit — you can also put some mozzarella on top or whatever cheese ya like!

    I love the soy sauce & ginger in this, gives it such a depth of flavor that is not expected in a “normal” stuffed pepper!

    Olive/Pecan Roll

    This is an appetizer that sounds crazy, but the taste is DELICIOUS!!!

    Dough:

    1.5 cups of all purpose flour
    3/4 teaspoon salt
    1/2 teaspoon paprika
    1/2 cup of butter
    1/2 cup of sour cream (add last)

    Filling:

    3/4 cups chopped pecans
    3/4 cup grated cheddar cheese
    3/4 cup chopped green olives
    2 tablespoons of mayonnaise

    Make dough. Separate into 2 balls. Flatten each ball into an 8×15 rectangle. Cut down the middle of each rectangle. Place filling on the edge of each of the 4 rectangles of dough. Roll each rectangle into a log. Cook with the seal facedown. Bake at 400 degrees for 20 minutes. Slice into pinwheels.

    My mom’s ADDICTING Seven Layer Dip

    Ingredients
    1 (1 ounce) package taco seasoning mix
    1 (16 ounce) can refried beans
    1 (8 ounce) package cream cheese, softened
    1 (16 ounce) container sour cream
    1 (16 ounce) jar salsa
    1 large tomato, chopped
    1 green bell pepper, chopped
    1 bunch chopped green onions
    1 small head iceberg lettuce, shredded
    1 (6 ounce) can sliced black olives, drained
    2 cups shredded Cheddar cheese

    Directions
    In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
    Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
    Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

    Servings: About 56
    Prep Time: About 30 minutes
    Ready in about 30 minutes

    Almond Granola (Great with plain Greek Yogurt!)

    4 1/2 cups rolled oats
    3 cups sunflower seeds
    3 cups almonds, chopped
    1 cup safflower oil
    1/2 cup malt syrup extract
    1/2 cup maple syrup
    1 tablespoon vanilla
    1 1/2 tablespoons ground cinnamon
    1/2 tablespoon almond extract
    pinch of ground cloves

    Directions:
    Pre-heat oven to 325 degrees. Mix dry ingredients in a large bowl, heat rest of ingredients. Mix liquid with dry ingredients and stir well. Bake in two 9 x 12 pans for 25-30 minutes until golden brown. Stir a few times while baking to ensure even browning. Let cool and store in covered container. Enjoy! *Makes approximately 15 cups.

    Toasted Pumpkin Seeds

    Ingredients
    One medium sized pumpkin
    Salt
    Olive oil

    Directions
    1 Preheat oven to 400°F. Cut open the pumpkin and use a strong metal spoon to scoop out the insides. Separate the seeds from the stringy core. Rinse the seeds.

    2 In a small saucepan, add the seeds to water, about 2 cups of water to every half cup of seeds. Add a half tablespoon of salt for every cup of water (more if you like your seeds saltier). Bring to a boil. Let simmer for 10 minutes. Remove from heat and drain.

    3 Spread about a tablespoon of olive oil over the bottom of a roasting pan. Spread the seeds out over the roasting pan, all in one layer. Bake on the top rack until the seeds begin to brown, 10-20 minutes. When browned to your satisfaction, remove from the oven and let the pan cool on a rack. Let the seeds cool all the way down before eating. Either crack to remove the inner seed (a lot of work and in my opinion, unnecessary) or eat whole.

    So, my favorite recipe is a sit-fry my mom always makes!

    In a wok, add a bit (a couple tablespoons, or as desired) of sesame oil and chopped shallots and garlic. Add sliced beef (we use a pre-sliced beef meant to be used for stir-fry that we just ask the meat man at the grocery store for), and cook until mostly done. Add chopped asparagus, broccoli, and red bell peppers (and perhaps more oil), and cook for about 5 minutes, mixing the wok contents every couple of minutes. Finally, add in a schezwan sauce of your choice (you can make this from scratch if you want), and serve it up with some brown rice!

    mine is a bean burrito recipe.

    in pan, heat 1/2 cup beans (canned kidney, i usually use) with 1/4 cup water. Add/mix in 1 tbs curry powder, 1/2 tbs of chili powder (or however spicy you want it) and 1/2 tbsp, to 1 tbs cumin ( the spices are to your taste, i usually just sprinkle it in, it’s really fool-proof) . STir to dissolve spices into water and coat the beans. continue stirring as water evaporates and turns into spice sauce that coats beans. meanwhile, microwave/heat up whole wheat tortilla. Remove beans from heat and pour/scrape into tortilla. wrap up, microwave for 30 seconds, and eat!
