How to Make Hungry Girl’s Egg Mug Classic

College life pretty much guarantees a lot of rushing around in the kitchen every morning. Therefore when I saw the Hungry Girl Egg Mug Classic, it was love at first sight. :)   This egg-celent breakfast cooks in 2 quick minutes and packs in a whopping 15g of Protein!

Dear Hungry Girl, what would we do without you?

Here are the 6 simple steps according to Hungry Girl:

1. Spray a mug with Pam Cooking Spray

2. Add a handful of spinach and microwave for 30 seconds

3. Blot excess liquid from spinach

4. Add 1 egg and give it a stir

5. Microwave for about a minute. Stir gently, and then microwave for another 30 – 45 seconds, until scramble is just set.

6. Add ketchup and any other toppings of your choice. Enjoy!

    My thoughts: Of course this 2 minute breakfast isn’t going to taste exactly like a Denny’s home style breakfast, but it sure is simple to make! If you’re running late for class or work, I’d definitely recommend this “egg in a mug” meal. On the other hand, if you do have 10- 15 minutes to whip yourself up a hearty breakfast, I would go for the stove top method. I can’t wait to experiment with more ingredients! Bacon, salsa, and avocado are definitely going to make a guest appearance in my next egg mug.

      ive DEF made this before! its great for on the go!! i love adding laughing cow to it for an extra creamy factor!

      I love Hungry Girl and yes I have tried this recipe!!

      She is coming out with a new book too end of March !! Im excited!!!

      I feel the same way about the egg in a mug, its good for a rushed breakfast but if I have the time I definitely want to do it on the stove top!

      Wow, great idea. I’ve actually never tried microwaving an egg before. I can pretty much be convinced to do anything with salsa though. I don’t think this breakfast would keep me full for very long though…

      I have never seen this before, but it does look interesting. I like that it is quick and easy and seems like you can make many variations on this.

      LOOOVE HG! she is going to be on “the best thing I ever ate” which is on the food network on friday! I dont know what time, but I cant wait to see what she has to say!

      I need alot to satisfy me in the morning, so this probably wouldn’t do the trick–however when I do only have a microwave, I use my handy dandy microwave omelet maker and get a big fluffy omelet out of the deal! I have been meaning to post a tutorial too!

      As much as I hate on Hungry Girl, she sometimes have pretty decent recipes! I haven’t heard of that one, but cool-io!
      Breakfast is me rushing out of class from our 10-minute break to the dining hall to scarf down scrambled eggs, and sneak away a bagel w/ cream cheese to nibble in class…
